Blue corn tortillas are made from nixtamalized blue corn, and they are something special. The striking blue-purple color, nuttier flavor, and slightly sweeter taste set them apart from white or yellow corn tortillas. They are not just for looks. They taste different, and many people prefer them.
What Makes Blue Corn Different?
Blue corn gets its color from anthocyanins, the same antioxidant pigments found in blueberries and purple cabbage. Beyond the color, blue corn has:
- Nuttier, sweeter flavor compared to white or yellow corn
- Higher protein content (about 20% more than yellow corn)
- More antioxidants from the anthocyanin pigments
- Slightly lower glycemic index
How to Make Blue Corn Tortillas
The process is the same as making any corn tortilla from scratch. The only difference is the corn you start with.
- Nixtamalize blue corn with cal (same process as white or yellow)
- Grind into masa. The masa will be a deep purple-blue color.
- Press and cook as normal. The color darkens slightly on the comal.
Note: the alkaline cal can shift the blue color toward green during nixtamalization. This is normal. The final tortilla will be a deep blue-purple.
